'Made in Abyss' has some of the best world-building I've ever seen. The Abyss itself is a character, full of unique ecosystems, relics, and dangers. Absolutely captivating.
You should definitely watch 'Hunter x Hunter' (2011)! The Nen system, the different arcs taking place in diverse locations, and the intricate politics of the world are just phenomenal. So much depth!
'Nausicaä of the Valley of the Wind' (movie) or even better, the manga, is incredible for world-building. The toxic jungle and its ecosystem are so unique and thought-provoking. Miyazaki's genius!
'Code Geass' has a surprisingly deep geopolitical world, with different factions and technologies. The alternate history is really well-realized and makes for a fascinating setting.
For sci-fi, 'Psycho-Pass' creates a super interesting dystopian future society based on the Sibyl System. It's a cool exploration of what could happen with perfect crime prediction.
