Definitely 'Berserk' (the manga is superior, but the 1997 anime is a classic). It's dark, epic, and has incredible world-building. Not for the faint of heart though!
Frieren: Beyond Journey's End is the current GOAT for fantasy. It's an incredible journey with amazing magic and character depth. Can't recommend it enough!
'Re:Zero - Starting Life in Another World' has a fantastic fantasy setting, great magic, and incredibly high stakes. Plus, a super engaging mystery.
Record of Lodoss War (OVAs) is a classic D&D style fantasy adventure. Old school but delivers on swords and sorcery! Or maybe 'Grimgar' for something a bit darker.
Overlord! While the MC is OP, the world-building, magic systems, and political intrigue are top-tier. It's a unique take on Isekai fantasy.
