I'm a huge fan of dark fantasy anime with mature themes, great storytelling, and a sense of realism or harshness, like Berserk or Vinland Saga. What else is out there that can scratch that same itch? I prefer less shonen-y stuff.

Claymore is exactly what you're looking for! Gritty, dark, strong female protagonists, and a brutal fantasy world. It's amazing.
Goblin Slayer, if you don't mind the extreme violence. It's super dark fantasy focused on realism in a dangerous world. Not for the faint of heart though.
Re:Zero has a lot of dark elements and intense psychological trauma, even though it starts as an isekai. It gets really gritty and complex.
Dororo has a similar revenge/journey plot to Vinland Saga, set in feudal Japan with yokai. It's dark and has some really impactful moments. Highly recommend!
Attack on Titan definitely fits the bill! While it has shonen elements, the mature themes, brutality, and moral complexities are very much in line with what you like.
