One Piece has arguably the most extensive world-building in all of anime! The lore is insane.
From the New World (Shinsekai Yori) has a unique, intricate, and somewhat dark dystopian world. So good!
Claymore again! The world feels lived-in and the lore around the creatures and organization is fascinating.
Mushishi. Every episode introduces a new aspect of the mystical world and its interaction with humans. Beautiful.
Re:ZERO, beyond the psychological stuff, the world of Lugnica feels so real and has deep lore.
Hunter x Hunter! The Nen system and the various locations like the Dark Continent are just incredible.
