Definitely The Misfit of Demon King Academy! Anos Voldigoad is basically a god playing around, and it's hilarious how everyone tries to fight him. He doesn't exactly hide it, but the power gap is insane!
You HAVE to watch The Eminence in Shadow. Cid Kagenou is the absolute king of this! He's secretly super powerful but goes out of his way to act like a background character, only to accidentally save the world. It's so good! 😂
Mob Psycho 100 fits this really well. Mob tries to live a normal life and hide his psychic powers, but when his emotions spike, he's unstoppable. Plus, it has amazing animation!
Overlord could be an option, Ainz is ridiculously strong and hides his full power from many. Also, Classroom of the Elite has Ayanokoji, who's not 'OP' physically but mentally he's on another level and hides it well.
