Try Re:Zero! It completely subverts the OP MC trope and the psychological elements are amazing. Plus, Rem is best girl 😉 The story gets really dark and thought-provoking.
Mushoku Tensei is pretty grounded for an isekai, despite the MC's initial pervy tendencies. The character development is top-notch and the world feels lived in. It's a true journey.
How about Ascendance of a Bookworm? It's about a girl who just wants to read books in a world without them. Super unique and wholesome! It's a slow burn but incredibly rewarding.
Grimgar of Fantasy and Ash is excellent if you want a more realistic, darker take on adventurers in an Isekai. It's not sunshine and rainbows, very much about survival and loss.
Overlord is pretty good for an OP MC, but he's evil and it's from the villain's perspective! That's a twist, right? It's fun to watch the bad guy win.
